    I'm assuming Kirinke is talking about roasting/baking the duck in an oven, in which case you'll get heat from all directions pretty effectively, so there's no need to flip it over.

    The reason why you roast/bake duck fatty side down, is so that the meat doesn't get greasy from the fat rendering down. Considering that I don't care much for dark meat in general, for me to say that duck is good eating is saying something.

    That's not too different from how I cook my (skin-on, bone-in) chicken breast. I've never tried to cook duck myself, it's not something that's available at all stores in the states, though I know a couple places near me where I can get it. It might actually be a good New Years Eve weekend kitchen project. When I've got a long weekend I like to try a few new things to expand my repertoire of kitchen techniques - so far this weekend I've got North African Meatballs on the agenda, but I've got 4 days to play around in the kitchen.

    Pan frying is probably a good technique for just the duck breast, but when you're cooking the entire carcass, pan frying can be a little problematic. Which is what we were doing. We weren't cooking just the duck breast. Sorry for the additional confusion.
